Salmon Seasoning

A tangy and slightly sweet seasoning for salmon. Use full-strength on top for a baked dish. If using a cedar plank, it can sit under the fish to bring a more subtle taste without drowning the wood flavor.

Ingredients

2 tablespoons grainy mustard

2 tablespoons mild honey or pure maple syrup

1 teaspoon minced rosemary

1 clove garlic

1 tablespoon grated lemon zest

Instructions

Mix ingredients well.

Bake in Oven: Brush over fish and bake covered for 20-25 minutes depending on thickness of cut. Optionally broil for 2-3 minutes longer to brown the top slightly.

Charcoal Grill and Plank: If using a cedar plank on a grill, place between soaked plank and fish and grill.
